Culinary itinerary among the typical products of Sila

The Sila National Park is the largest plateau in Europe, recently inscribed as a UNESCO Biosphere Reserve.

A vast territory straddling three provinces, Cosenza, Catanzaro and Crotone, which contains the wonder of centuries-old woods and sown fields, historic villages among the most beautiful in Italy, and a series of branded products and traditional excellences not to be missed.

Typical silane dishes and products 

Sila cosentina is crossed by naturalistic historical paths and ways of taste that lead to one of the most renowned PDO and PGI products in the region.

Among the dense woods inhabited by the Sila Wolf, the animal symbol of the park, there are the large crops of PGI Potato of Sila, the basic ingredient of recipes and typical dishes. Here the Podolica cattle breed and the prized Black Pork of Calabria graze in the semi-bred state, both Slow Food Presidia and PAT category (Traditional Agri-Food Product).

At the border between the Silane provinces flavors and shared products intertwine: in addition to potatoes, the very sweet Caciocavallo Silano PDO (cheese), is recommended to be enjoyed on the grill, with the delicious varieties of Salumi Calabresi PDO, cured meat, (bacon, capocollo, sausage and soppressata, a cured Italian sausage), and Savuto PDO and Calabria PGI wines.

Proceeding south and to the territory of Sila catanzarese is worth stopping in the localities that around the capital produce the great Calabrian PGI Oil.

Finally, moving to the Province of Crotone, you cannot miss the tasting of Pecorino Crotonese PDO (cheese) accompanied by a glass of Melissa PDO wine and a dessert based on Lemons of Rocca Imperiale PGI.
