Alto Crotonese PDO
Alto Crotonese PDO extra virgin olive oil is obtained from the fruits of the Carolea variety of olive trees.
The production and processing area of Alto Crotonese PDO extra virgin olive oil includes some municipalities in the province of Crotone including: Castelsilano, Cerenzia, Pallagorio, San Nicola dell'Alto, Savelli, Verzino.
Olives are harvested directly from the tree, manually or mechanically, by December 31st. No treatment is allowed that could alter the quality of the product, except washing the olives at room temperature and kneading. The milling must take place within two days of collection.
Alto Crotonese PDO is obtained by pressing different varieties of olives: the most used is the Carolea (no less than 70%); other varieties that can compete for a percentage of 30% are: Pennulara, Borgese, Leccino, Tonda di Strongoli, Rossanese.
Alto Crotonese PDO extra virgin olive oil has a colour that varies from straw yellow to light green, delicate olive odour and light fruity flavour.
