Fichi di Cosenza PDO
Fichi di Cosenza PDO (Cosenza Figues) are dried fruits of the Dottato Bianco di Cosenza, variety of the Ficus carica sativa species.
The product has a drop shape with the peduncle always present, the color of the peel is yellow with shades of green and some darker parts.
The production area of Fichi di Cosenza PDO covers almost the entire territory of the Province of Cosenza.
The figs are left to overripe on the plant: the fruit dehydrates slowly and is harvested exclusively by hand between August and October. After being harvested, the figs must complete the drying process for a further period, which varies according to the degree of ripeness and the method used. The drying can in fact take place with the traditional method - that is, in direct sunlight on reed supports - the other method, defined as "protected", consists in placing the fruits inside glass greenhouses.
Being a dried product with a high sugar content, Fichi di Cosenza PDO can be kept for fairly long periods; however, it is recommended to keep them in a cool, dry place.
Fichi di Cosenza PDO represent a gastronomic pride of the Cosenza area; they keep for a long time and are protagonists of traditional recipes.
