Tripe with tomato and beans

Tripe is a traditional farmer's dish; tripe with tomato and beans is a variant on the classic recipe.

Ingredienti

for 4 people

  • one kilo of ready-to-cook beef tripe
  • one onion
  • a few bay leaves
  • a sprig of rosemary
  • one chilli pepper
  • 100 g boiled beans
  • half a kilo of peeled tomatoes
  • 2 lemons
  • white wine vinegar
  • extra virgin olive oil
  • salt
  • black pepper

To start, the tripe (stripes of cow/beef stomach) is cut into pieces and boiled for half an hour in water, vinegar and lemon. In a frying pan, onion is sizzled until turning brown, then the tripe is added, the chopped peeled tomatoes, the aromatic herbs and a pinch of chilli. Everything is then cooked for about an hour (over low heat) and halfway through the cooking, the beans are added. 

The tripe is ready when it acquires a soft texture.
