Soffritto

Soffritto is a pork-based second course belonging to the ancient Calabrian culinary tradition.

Ingredienti

for 4 people

  • half a kilogram of pork (throat, neck, shoulder and rib parts)
  • a clove of garlic
  • a few bay leaves
  • a couple of sprigs of oregano
  • a tuft of wild fennel
  • one chilli pepper
  • 8 small pickled peppers
  • a glass of red wine vinegar
  • extra virgin olive oil
  • salt

The inner parts of the pig (throat, shoulder, rib) can be used to make this recipe. Before being cooked, the meat should be cut into pieces, soaked for about half an hour, rinsed and left to drain. Once these steps are completed, the meat can be sautéed (over moderate heat) with a little oil for 15 minutes.

After 15 minutes, the vinegar, chilli peppers, bay leaf, wild fennel, oregano and salt are added. Finally, whole peppers in vinegar are added after 15 - 20 minutes.

As it is a typical recipe, it is prepared throughout the Region and there are several variants. One of these involves cooking the meat with red wine and adding peeled tomatoes halfway through cooking.
