Potato omelette without eggs
Potato omelette without eggs (or Frittata 'du scuru) is a typical Calabrian recipe that is extremely simple to prepare. It is widespread on the Tyrrhenian coast of Cosenza, between Fiumefreddo Bruzio, Belmonte and Longobardi.

- a tuft of basil
- a teaspoon of hot chilli cream
- extra virgin olive oil
- salt
- oregano
The main ingredient for this recipe is a typical Calabrian product that also boasts the PGI brand: Sila potatoes. Start by peeling, washing and thinly slicing the PGI potatoes, then mix them with chopped basil leaves, a sprinkle of oregano and chilli cream.
To cook the dish, start by putting the oil in the pan and placing the potatoes in layers; cook the mixture for about 50 minutes over a low heat, with the lid on, For the last 10 minutes, turn the omelette over to cook the other side.
