Melanzane 'mbuttunate
Melanzane 'mbuttunate are a very simple and tasty recipe, widespread in Southern Italy: they are a Calabrian variant of the classic stuffed aubergines.

Ingredienti
for 4 people
- half a kilo of aubergines
- 2 cloves of garlic
- a small tuft of parsley
- 2 eggs
- 100 g sausage
- 100 g breadcrumbs
- 100 g Parmesan cheese
- half a hectolitre of pecorino cheese
- extra virgin olive oil
- salt
The making starts by boiling the aubergines for a few minutes. Once they have cooled down, the pulp is scooped out and the empty skins are set aside. The pulp is then mixed with bread crumb, beaten eggs, garlic, parsley, grated parmigiano and pecorino cheeses, and crumbled sausage (a Calabrian PDO product).
Once the aubergines skins are filled with this mixture, they are fried in boiling oil.
