Cavatelli alla nenesa

Cavatelli alla nenesa (herb) is a typical first course of Arbëreshë cuisine.

Ingredienti

for 4 people

  • 2 ounces of filatelli
  • 100 g of soaked salt cod
  • one celery stalk
  • one carrot
  • one small onion
  • 3 cloves of garlic
  • 8 peeled tomatoes
  • wheat flour
  • 4 slices of stale bread
  • extra virgin olive oil
  • salt
  • red pepper

To make the cavatelli, the soft wheat flour and the durum wheat semolina are worked together in order to get a soft, homogeneous dough; the dough is then cut into pieces about 2 centimeters long and a hollow is made down the center.

For the condiment, the nenesa, an herb that grows in the Pollino National Park, is boiled, cut into small pieces and then added to cow-milk ricotta and tomato sauce.

Eventually, after putting the cavatelli alla nenesa on the plates, a sprinkle of sheep-milk ricotta may be added, depending on taste.
