Broad beans with chicory is a typical dish of Southern Italy prepared with dried beans and enriched with chicory.

- 4 g dried hulled broad beans
- a kilo of field chicory
- extra virgin olive oil
- salt
Before preparing the dish, the beans must be soaked for 12 hours, then drained and cooked in salted water, over a low heat for about 2 hours, until they have the consistency of a puree. In the meantime, boil the chicory in salted water.
We recommend plating the dish by spreading the beans in the dish with the chicory on top and finishing it off with a drizzle of extra virgin olive oil.
