Bivongi PDO includes five types of wines: red, white, rosé, reserve, novello.
The production area of the product covers the coastal territories and the more inland ones found in these municipalities: Bivongi, Camini, Caulonia, Monasterace, Pazzano, Placanica, Riace, Stignano, Stilo and Guardavalle.
The red, rosé, reserve and novello wines are composed of 30% to 50% of Gaglioppo and Greco nero and 30% to 50% of Nocera, Calabrese and Castiglione. The white instead is composed of 30% to 50% of White Greco, Guardavalle and White Montonico and from 30% to 50% of White Malvasia and Ansonica.
Winemaking in the Bivongi area has remote origins and has evolved considerably over time.
