Liquirizia di Calabria PDO (Calabrian Liquorice) is a product obtained from the Cordara variety of the Glycyrrhiza glabra species.

The production area of ​​Liquirizia di Calabria PDO includes more than 200 municipalities in all the Provinces of Calabrian Region.

The liquorice harvest is carried out throughout the year and the spontaneous one can also be harvested - very widespread in Calabria - if the natural liquorice groves are registered and are part of the PDO circuit. The roots intended for commercialization are dried in open, ventilated, and sunny places.

Liquorizia di Calabria PDO exists in 3 different types: Fresh Root, Dried Root and Root Extract. The first type emanates an intense aroma and is straw yellow in colour. The dried version is characterized by its colour which can vary from straw yellow to ochre yellow and its very sweet and slightly fruity in flavour. The last type, on the other hand, is dark brown tending towards black with a bittersweet flavour.

The product is available in various formats, such as sticks, broken pieces, flakes, and others.
